We take great care in ensuring that our sturgeon are fed a diet of only the highest-quality ingredients, free from hormones, antibiotics, and GMOs. Full technological cycle

An important advantage of our company is the complete technological cycle of fish breeding, including the production of high-quality caviar. We take great pride in raising each individual fish with love and care in an ecologically clean environment, under the constant supervision of our highly qualified specialists.

Our caviar production begins with the careful selection of the best broodstock. We then use advanced breeding techniques to produce high-quality eggs, which are carefully incubated in our hatchery. The fries are raised in absolutely clean water from artesian wells, which undergoes additional filtration to ensure optimal water quality.

To ensure the highest standards of quality and sustainability, we use a modern Recirculating Aquaculture System (RAS) to grow our fish. This system allows us to maintain the required levels of oxygen, temperature, and other key parameters, ensuring the health and well-being of our fish and the quality of our caviar.

All of our growing processes are automated using advanced monitoring and control systems, allowing us to maintain strict quality control at every stage of production. From the careful selection of breeding fish to the packaging and distribution of our caviar, we take great care to ensure that our products meet the highest standards of quality and sustainability.

Veterinary, sanitary and laboratory

Our company takes great pride in our own accredited laboratory, equipped with state-of-the-art equipment, which allows us to conduct various types of research, including physicochemical and microbiological analyses, using traditional methods according to ISIRI standards. Thanks to our laboratory, we can improve our internal production control and confirm the quality of our products, including our sturgeon-based offerings.

To ensure the safety of our products, we conduct veterinary, sanitary, and laboratory checks on each batch of raw materials, containers, and finished products. At Aquatir, the sturgeon complex responsible for our products, we value the quality of our offerings and are committed to investing in scientific development and ensuring control over the safety of our products.

Premium caviar

After the sturgeon are carefully harvested, the precious caviar undergoes a meticulous process to ensure its quality. The eggs are separated from the membrane, washed thoroughly to remove any impurities, and then lightly salted to enhance their flavor. The caviar is then sorted by size, color, and texture to ensure uniformity and consistency.

Once the caviar is sorted, it is carefully packed into jars or tins and sealed to preserve its freshness. The packaging is designed to protect the delicate eggs from exposure to light, air, and moisture, all of which can impact their flavor and texture. The jars or tins are then labeled with information about the type of caviar, the date of processing, and other important details.

The packed caviar is then stored in a temperature-controlled environment to ensure that it maintains its quality. The ideal storage temperature for caviar is between 0°C and +2°C, and it should be consumed within a few days of opening to ensure the best possible experience.

At every stage of the process, from harvesting to packaging, the focus is on preserving the delicate flavor and texture of this prized delicacy. The result is a product that is as beautiful as it is delicious and one that is sure to impress even the most discerning of caviar connoisseurs.
